Smoothie Night

Who knew spinach was the key to a great smoothie? If you’ve never had a smoothie made with spinach (or other greens) I highly recommend that you do. For this FND we made a couple of delicious smoothies made with a variety of scrumptious fruits accompanied by a taco bar and chocolate banana pops.

The first smoothie we made was made up of spinach, bananas (for creaminess), mango, apples and some water. Smoothie #2 had spinach, strawberries, kiwi, bananas, blueberries and water. Both of these smoothies were amazing. Creamy, fruity goodness in a glass (or in our case, plastic cups). I don’t think I’ll ever make a smoothie without spinach again. It tastes good and it’s good for you, what more could ya ask for?!

We also had a fantastic taco bar with tortilla chips, some meat, beans, cheese, rice, avocado, tomatoes, lettuce, salsa and sour cream. This was the perfect accompaniment to our smoothies.

To round out this dinner, Mary made some dark chocolate covered frozen banana pops; a super simple dessert. All you have to do is slice the bananas in halves or thirds, melt some chocolate, dip the bananas into the chocolate and freeze for about 20 minutes. Easy!
